FONIO CHICKEN CURRY
Parsley/vegetables of your choice.
Marinate chicken with salt, curry powder, garlic, ginger and black pepper for about 15 minutes
Fry marinated chicken and set aside
Add onion to the same sauce pan used to fry the chicken and fry for a minute
Add Fonio and fry for a minute then add your chicken stock and stir, add a pinch of salt and cover for 5 minutes on a low heat
Add your chicken to the Fonio and stir together, cover and leave it on a low heat for 3-4 minutes.
Add parsley or any vegetables of your choice and your Fonio chicken curry is ready.
