DIM FONIO SALAD

INGREDIENTS

  • DIM Fonio
  • Salt
  • Arugula leaves
  • Carrot
  • Cucumber
  • Dried cranberries
  • Green peas
  • Olive oil and lemon
  • A cup of water

PREPARATION

Pour one cup of water in a sauce pan and leave it to boil.

Add a pinch of salt and mix a cup of fonio to the boiling water on fire.

Stir and leave it to cook on a low heat for about 5 minutes

After about 5 minutes, check to see if it is still hard then you sprinkle some water and cover it to boil for additional 2 minutes.

Put cooked Fonio in a salad bowl and add your Arugula leaves, carrot, cucumber, dried cranberries and green peas.

Add a mixture of olive oil and lemon juice.

Mix it together and   your fonio salad is ready.
